WINEMAKING

Grapes are handpicked, crushed and some lots are given overnight skin contact. Juice is cold settled to brilliant clarity and inoculated with selected yeast strains, well known for producing very fruity wines. Fermentation temperature is kept between 12-14°C to ensure a nice slow fermentation and optimal fruit flavour production.

TASTING NOTES

The wine displays a bright effervescent colour with a green tinge. The expressive fruit notes bounce from passion fruit to apple and pear. Nuances of kiwi and green melon depict the versatility of the 2019 Chenin blanc. The youthful multi- layered freshness is complimented by a balanced acidity. The 2019 Chenin Blanc claims its delicious super quaffer status that pushes many boundaries. Beetroot and citrus salad with goat’s cheese, steamed mussels with a garlic cream sauce, whole chicken on the fire with root vegetables and, if all else fails, just on its own for pure enjoyment.

VINEYARD

Grapes were all hand-picked and well sorted from our oldest Chenin Blanc vineyard (1986). It was a challenging, early, and very dry harvest. Water supplies had a great impact on the 2016 harvest, especially where vineyards were not buffered against the heat. However, the dry conditions led to the vineyards and grapes being very healthy overall. Most other regions, especially the Swartland, produced significant smaller crops, but at Simonsig Estate we produced 2% more than 2015. The Chenin Blanc grapes were in pristine condition. It was quite a challenge picking the various blocks on time before the sugar levels sky rocketed. We were able to produce beautiful blocks with an abundance of fruit and depth.

WINEMAKING

Juice was inoculated with a selected yeast culture and fermentation started in a stainless steel tank and fermented at about 12°C. When the juice reached a balling of about 5 it was transferred to 400L French oak barrels (3rd and 4th fill) to complete fermentation. The wine spent a total of 11 months in barrel and no Malolactic fermentation took place.

TASTING NOTES

Bright pale golden colour. On the nose the wine shows fresh floral and honey notes with hints of gooseberries and toasty oak aromas. The palate is filled with layers of dried fruit flavours. The wine has a zesty fresh acidity that adds to the freshness, resulting in a long lingering aftertaste.

VINEYARDS

Redhill Pinotage is made from a vineyard grown on the famous Redhills of Simonsig Estate. The red soil originates from decomposed weathered shale and is regarded to be the best soil for growing premium red wine. This is due to the excellent moisture retention capacity and good drainage.

WINEMAKING

Crushing and destemming to two open top fermenters. Fermentation temperature peaked at 28°C. Pressed after 6 days on the skins, alcoholic fermentation finished in the tank. Malolactic fermentation occurred in tank. Wine received 4 rackings before bottling. 15 months oaking. 79% French Oak, 21% American White Oak. 80% New Oak 20% Second Fill.

TASTING NOTES

The wine displays an inky black centre with a bright rim. Attractive black berry and bramble flavours with a tobacco, spice twist. Vivacious layers of dark fruit and cedar oak paints the palate. This beautifully crafted Pinotage with its full body and lush textures, represents a multifaceted wine. The tight knitted tannins express the lingering notes of supple fruit.
