VINEYARDS

Fruit for this wine was sourced from a 26 year old dry grown block south of Underhill Vineyard, slightly higher in elevation.

WINEMAKING

Hand harvested, crushed and destemmed into the half-tonne open fermenters. Hand plunged twice daily with some extended time on skins to soften the Cabernet tannins. Basket pressing and malolactic fermentation in French Bordeaux all 2 year old shaped barrels for 18 months.

TASTING NOTES

Fresh grapefruit intermingled with white peach and preserved lemon peel lift. Crunchy red apple freshness and the weight of ripe stone fruits makes for a bright yet generous palate. Citrus poise from the Semillon grapes, minimal skin contact lending ginger spice, some of the weight from maturation in old, neutral oak barrels as well as the Chardonnay fruit. 

Has sufficient generosity and texture to be approachable as a young wine but will reward careful cellaring for up to 10 years.

VINEYARDS

Fruit was sourced from Agincourt block of Cabernet Sauvignon planted in 1995 and Malbec planted in 1990. The Agincourt block is the most easterly part of the vineyard planted in one of the most sheltered sites. This cabernet clone is distinctly different to the No1 clone.

TASTING NOTES

Agincourt Cabernet consistently exhibits classic cabernet characters of cassis and dark berry fruits, along with a unique leafy herbaceousness. The Malbec plays its part with inky robust plum and black cherry and ample tannins to provide beautifully balanced structure.

VINEYARDS

100% Shiraz sourced exclusively from the unirrigated 1973 planted 8 acre block of Shiraz at the western extremity of Yarra Yering. A slight westerly aspect & vines rooted in a clay-based soils. 

WINEMAKING

Hand harvested and destemmed with no crushing to retain whole berries, directly to the traditional Yarra Yering “tea chest” half-tonne open-fermenters. High use of stalk baskets to increase stalk tannins, structure and interest. Basket pressed and aged for 18 months in French oak (30% new). Bottled via gravity without filtration.

TASTING NOTES

New world cool climate Shiraz starts here. Heady plum fruits and pretty violet aromatics interlaced with liquorice spice and hint of cracked pepper. Blood plums and cigar oak with a violet floral lift from the inclusion of stalk during fermentation. The heavier clay based soils produces wine dark fruits and spice, chewy tannins creating the framework to support the fruit and savoury undertones. A high inclusion of stalks are added back as well as some 100% whole bunch fermentation wine to lend juiciness plus extra cut and persistent tannins to the sweeping finish.
